Whisk all brine ingredients together.
Mandolin OR very fine slice cabbag.
Grate carrot.
Add brine to cabbage mixture and mix well.
Store over night.
Sttrain very well with seive to remove water.
Add mayonaise to get correct consistency, add more salt if necessary.
